Wow…I have never experienced Thunder Snow like tonight. It felt like it was a thunderstorm (which I would have preferred) but when the lightening flashed, you could see the foot of snow which has already fallen. Very interesting weather system. Poor Vinny, however, has sought out safety in the bathroom, poor guy does not like thunder! I am hoping this is the last snow of the season, I am very ready for spring to be here!

Unfortunately there is a snowstorm on the way, not exactly what I had hoped for this week after the promise of spring was in the air.
I don’t think Vinny is very happy about it either!
Sunday night I made one of my husbands favorite dishes. Smoked Polish Sausage (from our favorite meat market, Maplewood Meats), a mixture of beautiful Peppers, and Green Onion. It turned out very good!
I also put together some meals for myself for the week. One dish I put together was Soba Noodle Soup with Spinach and Shiitake Mushrooms. I never used Soba Noodles before, but I really like them in this soup!
I also made a chicken soup base to add to rice noodles, another yummy soup.
This morning I was able to make my husband a nice breakfast of Poached Eggs, Andouille Sausage, and Homeade Hashbrowns. Quite delicious.

Welcome Spring! Today marks the official start to Spring, what wonderful news! And to welcome it, a rainy day and possibility of thunderstorms. Although it may seem strange to some people, for me, there is nothing like a spring thunderstorm to calm the soul.
Vinny is starting his Sunday in his favorite way, in front of the fire, relaxing with one of his favorite toys Hedgie.
This weekend was full of some more relaxed cooking. Friday night my husband and I made Bunless Cheeseburgers with Fried Onions and Colby Cheese. My husband had his plain and I had mine dressed up with pickles and tomatoes. Yum!
Saturday night was a little different version of Bunless Cheeseburgers, just making them a bit smaller. I also made some deviled eggs per my husbands request. Both turned out well.
Sunday morning breakfast for my husband consisted of scrambled eggs with colby cheese and a sprinkling of green onions with a side of smoked andouille sausage. My husband had never tried andouille sausage before this morning, but ended up really enjoying it!
I am excited to have a rainy day at home, just doing some things around the house. Tonight, per my husbands request, I will be making smoked polish sausage, peppers, and green onions, one of his favorite dishes.

The day started out with the usual Sunday morning breakfast. Yummy Bacon and Poached eggs for my husband (and Vinny) and fresh juiced carrots and apples for me. A great way to start the day for everyone, including Vinny.
What a wondeful thing, a beautiful sunset an hour later, I love it!
Tonight, per my husband’s request, was spaghetti night. So after a busy day, I got my homeade spaghetti sauce started. The sauce was almost finished by the time my husband got home from work. Since we had the extra daylight, we decided to take Vinny for a quick walk before dinner, he was quite happy, Vinny loves his walks!
Dinner turned out well, and the great thing about spaghetti is you can dress it up any way you want. You can have it plain, with a sprinkling of fresh grated parmesan, or how I like it, with a little mozzarella, cheddar, and parmesan. Paired with some fresh garlic bread and some wine…yum! It was a great Spaghetti Sunday Night dinner.

After a busy, but nice, Saturday it was time to get ready to have dinner with my husband and my parents. Tonight on the menu, homeade onion rings and french fries and pan fried blue gill. And to make it feel a bit like summer, mojitos for the drink of choice.
My parents arrived, and while my husband and my parents chatted, I got the food started. Soon the onion rings and french fries were ready they headed for the table. Whiled I heard my favorite sounds of “yum” and “this is so good,” I started the fish. All turned out well and everyone left the table satisfied and full, including Vinny, who also got a gourmet dinner of cottage cheese and raw chicken.
So after a wonderful evening, time to sign off. Hope everyone had a wonderful Saturday!
Vinny and My Husband Happy After Dinner
Finally the weekend has arrived! I also had a lovely Friday with my husband after I was done working, and had a special treat as well, I saw my first robin of the year! I actually was lucky enough to see two, but who is counting? My husband and I also saw four cranes fly over, which was fantastic. These are surely all signs that spring is getting close. Tonight also marks the time we spring ahead for Daylight Savings Time. I have to say, I much prefer the spring ahead then fall back. It will be lovely having an extra hour of sunlight in the evening.
It looks like Vinny is ready for Spring too...Brrr it's too cold, I need a blanket to keep me warm!
I never got around to posting last week the dishes I created. I ended up getting a bit of a stomach bug, so thinking of food, posting pictures of food, were not on the top of my priorities. Last weekend I was able to do two wonderful dishes, French Onion Soup and Heirloom Tomato Bruschetta with a Balsamic Vinaigrette. One, being one of my husband’s favorite foods, and the other a creation of mine. Both turned out delicious.
This weekend will start out tonight with a good Wisconsin Fish Fry. I will be pan frying some of the wonderful bluegills that my husband and his father got fishing this past summer. I will also be making homeade french fries, and something special for my mom, homeade onion rings. It is a pretty good system, my husband catches the fish, my dad cleans the fish, I cook the fish, and my mom makes the tarter sauce to go with the fish. It works quite well.
I have to get going so have a wonderful Saturday everyone!
Welcome weekend, glad you are finally here! After a pleasant Friday night, Saturday morning has arrived. I am off to run errands and enjoy my weekly lunch with my mother, which I am very much looking forward to. For this weekend, per my husband’s request, I will be making French Onion Soup. And at this point, not sure what else I will be making, we shall see. Anyway, I must run.
